Szechuan Chicken Rice Wraps

The past couple weekends have been amazing, and I am sad to see them come to an end.  Last week was my trip to North Carolina, and yesterday I got back from an awesome trip to Foxwoods Resort and Casino, celebrating my sister Kasey’s 21st birthday.  Although no one hit it big in the casino, we had a ton of fun just walking around, playing the slots, and hanging by the pool.  Now its back to reality…Time to unpack, unwind, and get back to work! 🙂

Practice makes perfect! Today’s lunch was my second attempt at rice paper wrapping.  As you can see in my pictures my wrapping is getting much better!  The trick is to roll the sides first while gradually folding the ends in. Be careful to not over stuff the wrap!  Rice paper is very delicate and tears easily.  I found that out the hard way a couple of times!

Today I made a sweet and spicy style rice wrap using chicken, kale, carrots, and green bell pepper.  This wrap was really tasty, and Luke is already looking for me to make some more.  Making them was really easy too (once you get the wrapping down)!  All you need to do is cook up some chicken strips in the spicy szechuan sauce, cut up your favorite veggies from the fridge, fold them up into a sticky rice paper wrap, and serve with some delicious sweet chili dipping sauce!

Szechuan Chicken Rice Wraps

Gluten Free


Chicken breast, cut into strips

Szechuan sauce ( I use San-J Gluten Free Szechuan Sauce)

Green peppers, julienne

Carrots, julienne


Rice paper wrappers (Blue Dragon Spring Roll Wrappers)

Sweet chili sauce (I used A Taste of Thai’s  Sweet Red Chili Sauce, which is gluten free)


1) Chicken: Place chicken strips in a pan on medium heat. Add desired amount of szechuan sauce and cook until chicken is completely cooked through.

2) Vegetables: Chop veggies and set aside.

2) Rice Paper Wrap: Fill a cookie sheet or shallow baking dish with warm water. Place the rice paper wrapper into  water for 15-20 seconds until soft. Remove the wrapper and lay on a paper towel and blot dry (the wrap should become sticky).

3) Now just fill, roll, and repeat!

4) Serve with a gluten free sweet chili sauce for dipping!

Girls Weekend in NC!

Just got home from an awesome weekend in North Carolina with my friend Jodi.  I’ve been feeling a little behind on my posting, because I have been away.  So I thought I would share a little bit of my trip!

Thursday night, after hours of flight delays and during what was (hopefully) the last snow storm of the season,  Jodi and I were finally off to NC for the weekend.  We were thrilled to be leaving the snowy weather behind us!

Our weekend was filled with lots of shopping (maybe a bit too much!), two trips to Maggie Moo’s (the best ice cream ever!), a visit to Duke University, and of course a little bit of sunbathing!  We had a wonderful time!

My favorite part of the trip was visiting Duke University’s Sarah P. Duke Gardens. This gorgeous 55 acre public garden is a must see if you are ever in the Raleigh-Durham area.  We spent hours just walking around the 5 miles of walks and pathways, and of course we took tons of pictures!

And of course no blog post is complete with out some gluten free goodness! 🙂  On our vacation Jo introduced me to P.F. Chang’s!  I was surprised by the size of their gluten free menu.  They offer 29 gluten free items including: starters, entrees, vegetarian options, and dessert.  The best part is…they modify their most popular menu items to be gluten free using their very own versions of gluten free sauces and marinades!  Another thing I found out is that they only serve gluten free food on round plates.  Non-gluten free food is served on square and rectangular plates, this is something good to look out for.

Everything on the P.F.Chang’s menu looked really good!  I ended up ordering the gluten free egg drop soup, and the highly recommended (by Jodi) gluten free chicken lettuce wraps. Lets just say I was not disappointed, and I can’t wait to go back!

It’s a special KIND of day!

So I’m heading off to Raleigh, NC tonight with one of my oldest and very best friends Jodi! It’s her 27th birthday and we are going down for a long weekend to celebrate! The best part is… We are just missing the big snowstorm on it’s way to NH! Or hopefully anyway, currently our flight is delayed until 10:30 pm. So I am going to take this opportunity to write my review on the Pomegranate Blueberry Pistachio KIND bars I packed with me for my trip.


When on the road for the day or traveling I always like to keep what I call my “emergency purse snacks” with me in case I am ever in a bind, and can’t find anywhere to stop for something gluten free. These KIND bars are a perfect emergency purse snack! They are all natural and gluten/wheat free. The bar I had today was Pomegranate Blueberry Pistachio + Antioxidants (containing 50% of the daily value of vitamins A, C, and E!) With 170 calories and 3 grams of protein this KIND bar definitely makes a good snack between meals to give you that extra boost you need. I love this “KIND” of bar! The combination of almonds blueberries, cashews, honey, raisins, crispy rice, and pistachios create a unique and very tasty treat! 🙂
